Be Prepared: Christmas Leftovers.
Christmas Eve has finally arrived and last minute preparations are on today's agenda for everyone. I just heard on the news that Australians will spend more than $800 million today! Most of it on last minute presents.
A few people have been writing about their Christmas traditions and I thought I'd share ours. We put our tree up on the 1st of December. We watch all the daggy Christmas movies, my favourite is It's a Wonderful Life!' and on Christmas eve we watch Carols by Candlelight.
On Christmas day we have bacon & eggs for breakfast and a full cooked traditional dinner with ham. turkey, chicken, lamb and beef, followed by plum pudding, complete with sixpences in it. We have always had this no matter how hot it is here, and some years it is really hot! After dinner there is a water fight and then the lazing around, dozing, catching up with rellies.
Boxing day is a lovely lazy day for me, I just lay around and read or sleep. I don't go to the sales, I couldn't stand all the rushing around.
The other thing about Christmas is the leftovers. I remember eating ham sandwiches for what seemed like weeks after Christmas as a kid. Freezing the leftovers in meal servings will save money and cooking over the next few weeks. I use zip lock bags to freeze meal sized portions in. In your last minute preparations today spare a thought for how you can use all the leftover food and make sure you have enough containers for storing.
Food poisoning is common at Christmas time so take the right precautions to avoid it. Leaving meat to cool our of the fridge and reheating leftovers incorrectly are common causes. Here's some tips for Christmas food handling & leftovers recipes:
store Christmas food safely.
How to defrost & cook poultry safely.
Leftover Turkey recipes.
Leftover alcohol recipes.
Leftover Ham recipes. (heaps of great recipes, better than endless ham sandwiches!)
Leftover seafood recipes.
London's top chefs leftover recipes.
So be prepared for the leftovers and make the most of them.
PS if you want to win a package of Aussie goodies then leave a comment on this post before then end of December, no leftovers I promise:)
