Budget Beater Meals: Chicken Soup

There is nothing makes me feel more nurtured when I am sick than home made chicken soup. Since I am the person who makes great soup in the family I have to make it for myself but it brings back that whole cosy, spoiled feeling of being sick as a kid and having my mum or my grandma make me homemade soup. I made up a batch yesterday and I'm sure it's helping! Just the smell of it makes me feel better.

Here's the recipe and the cost.

Chicken Soup
1 kg chicken drumsticks $4.00
1 brown onion .30
3 carrots .40
1 turnip $1.10
1/2 bunch celery $1.79
1 parsnip .80
4 teasp vegetable stock powder .60
4 tbspns olive oil .90
4 litres water

Heat the olive oil in the bottom of a large saucepan. Add finely chopped onion and celery and stir at the lowest heat till onion is transparent. Add the chicken drumsticks and cook until lightly browned on a low heat. Grate the turnip, carrot, and parsnip and add the the browned chicken, onion, celery mix, cook with lid on for about 10 minutes, stirring several times. Add the 4 litres of water and the vegetable stock powder. Simmer on a lowest heat for 4-5 hours, stirring occasionally. Remove the bones from the soup and serve.

If you like noodles just add some egg or rice noodles, or even a 2 minute pack of noodles to the mix 5 minutes before serving.

This made 4 litres of delicious soup, so 16 serves = .64cents a serve and full of goodness. You can always make it thicker by adding more vegetables if you like really hearty soup.

This would freeze OK for a single person household like mine wouldn't it?

yes it freezes, fine, i just froze some in plastic containers to take to work.
I really like making soup so I'll post some more recipes as I make them.

Yumm - I made stock using whole chicken today - will likely become Chicken and corn soup.
Yours sounds delicious too.

Did you know Aldi sell whole frozen chickens 1.5 kg for $5.49 (3.88 a kilo or similar -cheaper than legs)

baby amore, thanks for the aldi tip, I will have to get some and put in the freezer, I much prefer homemade stock and I love the smell of it simmering away..
